Chef Niki Nakayama of n-naka in Los Angeles takes the art of food to a new level with her kaiseki dishes. Kaiseki is the art form of balancing the taste, texture, appearance, and colors of food. To this end, only fresh seasonal ingredients are used and are prepared in ways that aim to enhance their flavor.
