When one talks about the art of cuisine they had to have Chef Noriyuki Hamada in mind. One of the most incredible and supremely creative chefs I have seen. Chef Noriyuki Hamada is head of the Yukawatan restaurant in the Japanese town of Karuizawa Nagano Prefecture.
Chef Noriyuki Hamada artfully uses produce from this mountain region, creating exquisite dishes influenced by French culinary techniques. His creations make him one of the most artistic and creative chefs in the world. Winner of the predigest Bocuse d’Or in 2013 Chef Hamada’s canvases are his plates and to call his dishes works of art is an under statement. Chef choices the perfect plate for each dish with the help of a local potter, Ryota Aoki.
